Grandma's Grams

Serving: 24
Ingredients
1. 12 gram crackers
2. 1 stick of margarine
3. 1 stick of butter
4. 1 cup of brown sugar
5. 1 cup of chopped walnuts

Directions
1. Pre heat oven to 300 degrees
2. Line a 9x5 pan with wax paper.
3. Divide the 12 gram crackers (on the dotted line) into fours.
4. Bring to a boil the margarine, butter, and brown sugar.
5. Stir in chopped walnuts.
6. Once all ingredients are combined, immediately pour over gram crackers.
7. Bake for 10 minutes.
8. Take the gram crackers off the pan and let cool (before the top gets hard).

Spanish Sunny Side Up




Serving: 1
Ingredients
1. 2 eggs
2. 2 pinches of salt
3. 1 tablespoon of black beans
4. 1/3 of 1 avocado
5. 1 tablespoon of cheddar cheese
6. 1 tablespoon of salsa
7. 1 whole wheat tortilla

Directions
1. Fill a frying pan with water half way. 
2. On a medium to high heat place the eggs in the water.
3. Cook for about 5-7 minutes occasionally stirring the top when foam arises. Cover the top with a lid in between stirring.
4. Once eggs look formed and the whites form into a solid, take out with a spatula.
5. Place the egg on your tortilla.
6. Pour the water out of the pan and put back on the stove, with the heat off.
7. Put your cheese in the pan to melt from the heat of the pan.
8. Place the cheese, black beans, avocado, and salsa on the tortilla.

Veal Chops

Serving: 6
Ingredients
1. 1 cup of Italian seasoning breadcrumbs
2. 2 eggs
3. 1/4 cup of olive oil
4. 2 pinches of salt
5. 1 teaspoon of onion powder
6. 2 lbs of veal chops

Directions
1. Pre heat oven to 375 degrees
2. Rinse in the veal chops in cold water.
3. Beat the 2 eggs.
4. In a bowl place the veal chops, and pour the eggs, onion powder, and salt. Mix. 
5.  Place cup of breadcrumbs in a plastic bag.  
6.  Individually place veal chops in plastic bag and shake.  Take veal chop out, and place another. Repeat this process until finished.
7. Lightly coat baking pan with olive oil.
8. Place veal in the baking dish, and bake for 10 minutes.
9. Flip veal chops over, and place in the oven for an additional 10 minutes.
10. Switch oven temperature to broil.
11. Place in baking dish in broiler for 3-4 minutes each side, until crispy.

Creamy Chocolate Chip Dip

Serving: 10
Ingredients
1. 1/2 cup of margarine
2. 1/2 cup of brown sugar
3. 1 teaspoon of vanilla
3. 8 oz cream cheese
5. 2/3 cup of confectioners sugar
6. 1 cup of crushed chocolate chips

Directions
1. Using the double saucepan, melt the margarine and brown sugar until combined.
2. Add in vanilla and cool for 10 minutes
3. In a separate bowl, combine the cream cheese and confectioners sugar
4. Add the liquid mixture with the dry ingredients and stir until combined
5. Add in the chocolate chips
6. Refrigerate for about 10 minutes to serve chilled.

Roasted Tomato Eggplant

Serving: 4
Ingredients
1. 1 large eggplant
2. 1/4 cup of olive oil
3. 1 cup of cherry tomatoes 
4. Onion powder
5. 2 pinches of salt

Directions
1. Pre heat oven to 375 degrees
2. Slice eggplant into 1/4 of an inch 
3. Lightly coat a baking dish with olive oil
4. Lay eggplant flat on the baking dish.  (You will most likely need more than one baking dish in order to fit all of the eggplant)
5. Lightly coat the top of the eggplant with olive oil. 
6. Sprinkle some onion powder and salt over eggplant.
7. Place in the oven for 30 minutes
8. Once eggplant is baking, slice cherry tomatoes in half.
9.  When eggplant is ready, take out and flip over.
10. Spread tomatoes around the baking dish.
11.  Leave in the oven for an additional 10 minutes.

Pita Chips


Serving: 2
Ingredients
1. 2 Pita's
2. Onion Powder
3. Garlic Powder
4. Salt
5. 2 tablespoons of olive oil
6. Sweet Basil

Directions
1. Pre heat oven to 375 degrees.
2. Cut pita into bite size 1.5" triangle pieces.
3. In a bowl, mix pita and olive oil.
4. Add in a pinch to 2 pinches of salt. Mix.
5. Sprinkle some onion and garlic powder for flavoring.  Mix. 
6. Lay the pita chips flat on a baking sheet.
7. Sprinkle some sweet basil on top.
8. Leave in the oven for 15-20 minutes.
Tastes delicious with hummus!

Lemon Chicken Poppers

Serving: 3
Ingredients
1. 2 cups of cut boneless chicken
2. 1 teaspoon of lemon juice
3. 3-4 tablespoons of breadcrumbs
4. Onion powder

Directions
1. Preheat oven to 350 degrees.
2. In a bowl, mix chicken and breadcrumbs.
3. Spread in a baking dish.
3. Drizzle lemon juice, and onion powder over the chicken.
4. Place in the oven for 15 minutes.
5. Take out and flip over.
6. Place back in the oven for an additional 5 minutes.

Cookies N' Cream Bar


Serving: 12

Ingredients
1. 5 tablespoons of margarine
2. 1 bag of marshmallows 
3. 1 package of crushed up oreos (crushed up into small pieces)



Directions
1. Using low heat, melt margarine in large saucepan on oven top
2. Add in marshmallows & occasionally stir until melted
3. Remove from heat & add in oreos 
4. Put mixture into an 8x8 pan & let cool before cutting & serving

Zucchini Parmesan Fries


Serving: 8
Ingredients
1.    3 Zucchinis 
2.   1 egg
3. 1/2 cup of seasoned breadcrumbs
4. 1/2 cup of shredded parmesan cheese

Directions
1. Pre heat oven to 425 degrees
2. Slice zucchini into 1/3" slices
3. Create an assembly line of the following:
• 1 deep plate with a whisked egg
• 1 plate of your breadcrumb mixture with 1/4 cup of the parmesan. Leave the rest aside to sprinkle on top.
• 1 baking tray - use non-stick cooking spray before placing your zucchini
4. Coat your zucchini in egg followed by your breadcrumb mixture. Place on your baking tray. 
5. Place in the oven for 10 minutes
6.  Flip your zucchini
7.  Place back in the oven for 10 minutes
8. Sprinkle your parmesan cheese on top of the zucchini and place back in the oven for 5 minutes.
*Optional Step- 9. To get extra crispy, flip the zucchini over a second time and place back in the oven for another 5 minutes.

Inside Out Chocolate Covered Strawberries



  
Serving 12:
Ingredients
1. 2 packages of 16 oz containers of strawberries
2. 1 12 oz package of semi sweet milk chocolate chips

Directions
1. Cut the pulp of the strawberry
2. Once all cut, lay on a baking tray
3. Pour chocolate in a pan and melt on a low heat.  Constantly stir, in order that chocolate doesn't stick. Make sure it stays on the low heat in order that the chocolate doesn't burn.
3. Once all of the chocolate chips are melted, pour into a plastic bag.  Cut a whole on one of the corners of the bag.
4. Gently squeeze the chocolate out of the bag into the strawberry wholes.  
5. Once the chocolate is in the strawberry, try and stand it up on the edge of the tray to prevent the melted chocolate from spilling out of the strawberry.  
5. Place the strawberries in the fridge for 25-30 minutes to let the chocolate harden before serving.

Tropical Water

 Serving: 20
Ingredients
1. 1/2 a peach
2. 1/2 an apple
3. 10 strawberries

Directions
1. Cut the fruit into bite size pieces.
2. Place each fruit in its own ice cube tray.  
3. Once the fruit is placed, fill the trays with water.
4. Place in the freezer for about an hour to an hour and a half to freeze.
5. Once ice cube fruit is done, mix and match. Place all three fruits in a pitcher.

Chicken Lo Mein


Serving: 4
Ingredients
1. 20 snow peas
2. 1 large head of broccoli or 2 small
3. 1 cup of shredded carrots
4. 1 cup of boneless chicken (thighs or breast)
5. 5 tablespoons of teriyaki sauce
6. 7 oz package of egg noodles
7. 1/3 cup of chicken broth

Directions
1. Boil egg noodles, and rinse in cool water.  Set aside.
2. Steam snow peas and broccoli. Set aside.
3. In a large skillet, on medium heat, sauté chicken with 1 tablespoon of teriyaki sauce.
4. Once cooked through, add pasta and another tablespoon of teriyaki sauce.  Stir for 2 minutes.
3. Add snow peas, carrots, and broccoli, and another tablespoon of teriyaki sauce.  
4. Continue to stir so the noodles on the bottom won't stick and burn.  You can occasionally cover it for a minute at a time in between stirring.
5. Continue to add the rest of the teriyaki sauce for more flavoring and color while mixing.
6. Lo mein is finished when mixture is thoroughly mixed through after 15 minutes in the skillet.

Apple Tuna


Serving: 3
Ingredients
1. 3 cans of solid white albacore tuna (in water)
2. 3 tablespoons of light mayo
3. 1/2  a teaspoons of sweet 10 (sugar substitute)
4. 1/3 teaspoon of lemon juice
5. 3 small green apples
6. 1/4 cup of candied walnuts

Directions
1. Drain water out of tuna cans and pour tuna into a bowl.  Chop tuna.
2. Add mayo into the bowl. Mix.
3. Add lemon juice and sweet 10.  Mix.
4. Cut the top of the apple off.  Take the inside of the apple out and set aside.  (A knife is the best way to take it out).
5. Slightly crush the walnuts, but not to the point where it looks grinded because you will lose that crunch when it is put in the tuna.
6. Add walnuts into the tuna. Mix.
7. Chop the apple that was taken out, and add it to the tuna.  Mix.
8.  Place the tuna inside the apple.  No bowl is necessary!

Eggplant Mix


Serving: 6
Ingredients
1. 1 jar of sweet roasted red peppers
2. 2 lbs of eggplant
3. 1 lb package of sliced mushrooms
4. 1 can of white corn
5. 1 tablespoon of garlic powder
6. 1/4 cup of olive oil
7. 1/2 teaspoon of salt

Directions
1. Dice the red peppers into 1/3" pieces
2. Dice the eggplant into 1/2" pieces
3. Place peppers, mushrooms and eggplant in a bowl.
4. Season it with salt, garlic powder, and olive oil.
5. Place in a baking dish
6. Put in the oven at 400 degrees for 25 minutes.
7. Place corn in baking dish. Mix.
8. Place baking dish back in the oven for 15 more minutes.

Sugar Cookies




Serving: 20
Ingredients
1. 1/2 cup of margarine
2. 1 cup sugar (& a little extra to sprinkle the cookies with)
3. 2 eggs
4. 2 tablespoon milk
 5. 1 tablespoon vanilla
6. 3 1/2 cup flour
7. 2 tablespoon baking powder

Directions
1. Pre-heat oven to 375 degrees
2. Cream margarine and sugar together 
3. Add eggs, milk, & vanilla and mix until well combined
4. Add flour and baking powder 
5. Shape into a ball and flatten before placing into the oven
6. Place in the oven for about 15 minuties or until golden brown
