Coleslaw Salad

Serving: 5

1 14 oz. bag of Coleslaw
1/2 cup of Canola Oil
1/2 cup of White Vinegar
1/2 cup of Sugar
1-2 tablespoon of Soy Sauce
1 packet of Ramen Noodles (including spice packet)

Place the Coleslaw in a bowl and set aside
In a separate bowl, mix together the Canola Oil, White Vinegar, Sugar and Soy Sauce
Pour the dressing over the Coleslaw. Crumble the Ramen Noodles over the salad and sprinkle the spice packet over the Coleslaw
Toss the salad until all ingredients are combined

Garlic Scallion Mashed Potatoes

Serving: 8-10
5 red potatoes
1/2 teaspoons of crushed garlic
2 tablespoons of margarine
1/3 cup of chicken broth
1 cup of diced scallions
Salt and pepper to taste

1. Boil potatoes for 30 minutes
2. Drain potatoes and keep in pot.  Add chicken broth and crushed garlic.
3. On a low heat, mash using a potato masher or the back of a fork until smooth. 
4. Add salt and pepper to taste.  Once mixed well, remove from the pot and place in a bowl.
5.  Add scallions.  Mix well.
